Marinated salmon tartare with oyster sauce, guacamole, and tobiko roe on a crispy rice base.

• Iberian Cloud

Bao bun filled with glazed Iberian pork jowl in Peking-style hoisin sauce, topped with spring onion and fried garlic.

• Eastern Sea

Roasted meagre fillet with ginger and sesame, served with wakame seaweed salad.

• Umami Beef

Prime beef sirloin with sweet potato trinxat, in a coconut and teriyaki mushroom sauce.

Fluffy sponge cake with passion fruit and a touch of yuzu. Served with coffee or tea.
