1928 Restaurant
The 1928 gastronomic restaurant pays tribute to the historic ties between Spain and France through a culinary concept that brings together the best of both traditions. Led by chef Eduardo Salanova and the head waiter and sommelier Ana Acín, its cuisine reinterprets French recipes from a contemporary perspective, incorporating constant nods to the product and the Aragonese pantry. An exclusive dining experience that celebrates the legacy of Canfranc International Station and its role as a meeting point between two cultures.
TRANS-PYRENEAN CUISINE
Tradition and territory
Inspired by the historic banquet held during the inauguration of the Canfranc International Station in 1928, the restaurant presents a gastronomic journey through the Aragonese and French cuisines of both sides of the Pyrenees. Its tasting menus reinterpret classic preparations with contemporary techniques and a careful selection of seasonal ingredients, giving rise to a refined cuisine in which the balance between tradition, creativity, and product defines each pass.
