FROM ARAGON TO THE WORLD
The restaurants and bars at Canfranc Estación, a Royal Hideaway Hotel, draw on the know-how of yesteryear in their kitchens to shape a unique gastronomic offering in the Aragonese Pyrenees. A cuisine that fuses traditional Aragonese recipes with avant-garde techniques and subtle influences from French gastronomy.
At the head of this ambitious project are chef Eduardo Salanova and restaurant manager Ana Acín, both from Huesca, who make local produce, the excellence of the raw materials and culinary mastery the great protagonists of the experience.
The gastronomic offering at Canfranc Estación, a Royal Hideaway Hotel, includes three restaurants, a Snack bar and a signature cocktail bar located inside an elegant library. With a strong identity, each space offers its customers a haute cuisine experience on a journey through the world's flavours, aromas and cuisines. A varied and healthy proposal with a local touch.

Originally from Canfranc, he discovered his passion for cooking at 16 and honed his skills in the kitchens of haute cuisine restaurants early in his career. He was part of the kitchen team of Echaurren (Ezcaray), during the year in which the restaurant obtained its second Michelin star. A year later, he joined the team at Ángel León's Aponiente, a three-Michelin-star restaurant, coinciding with the restaurant's acquisition of its second award. He returns to his homeland to lead the kitchen of the emblematic Venta del Sotón, where he obtains his first Michelin Star with Espacio N. In 2023, he returns to his town, Canfranc, to lead the gastronomic proposal of all the hotel's restaurants.

Passionate about gastronomy from an early age, Ana Acín brings her love of the dining room, professionalism, and dedication to service to every experience, offering guests attentive, impeccable care and creating unique moments around the table. After fifteen years at the helm of the family restaurant (Venta del Sotón), she undertook, together with his partner Eduardo Salanova, the challenge of combining kitchen know-how with his unique and impeccable understanding of room service.
Passionate about challenges and a lover of good cuisine, her career has always been marked by a firm defence of the products of Alto Aragón and the importance of pairing in the gastronomic experiences she directs, inviting diners to travel the world through her wines. Currently, Ana Acín leads an extensive team of professionals who convey the recipes' interpretation to the diner, accompanying them with an excellent pairing.
