Every year, bluefin tuna (Thunnus thynnus) travels thousands of kilometers from the North Sea to the warm Mediterranean to reproduce. Just before entering the Strait of Gibraltar, it falls into the Almadrabas of the Cadiz fishermen. And from their networks to Atunante. From this tuna, considered the best in the world, this 6-course tasting menu emerges.
