Located in the iconic 5-star Barceló Torre de Madrid, next to Plaza de España in Madrid, Somos invites guests to discover a gastronomic concept rooted in Madrid's culinary tradition, seasonal produce and a contemporary approach.
At the helm of the kitchen is Jorge Lacera, a chef with more than 25 years of experience in the restaurant and hotel industry. His approach draws on culinary memory, respect for produce and an honest understanding of cuisine: no frills, precise technique and plenty of flavour.
With large windows and views of Gran Vía, Somos combines Madrid cuisine, design and atmosphere in the very heart of the capital. An elegant, bright and vibrant space where Madrid can be tasted, experienced and felt.

Somos offers fresh, seasonal cuisine centred on produce from Madrid and the rest of Spain. A menu that journeys between land and sea, drawing on traditional culinary heritage recipes and reinterpreting them with freedom, technique and a contemporary perspective. A way of understanding signature cuisine in Madrid through respect for produce and seasonality.
The concept evolves with the market and each season, featuring dishes that celebrate Madrid and Spanish cuisine through an approach that is recognisable, straightforward and full of intention. Each creation is designed to place produce and flavour at the centre, delivering a dining experience that changes with the seasons.
The experience is completed by the Fuego y Memoria tasting menu, a journey through Somos' culinary identity. In addition, the restaurant offers a carefully curated selection of wines, Madrid vermouths and artisan drinks, chosen to complement the menu and explore new wine-pairing possibilities.
Jorge Lacera, the chef behind the grill
Jorge Lacera is a second-generation chef with more than 25 years of experience in the restaurant and hotel industry. With Catalan and Andalusian roots, he made Madrid his home in 2000 and has since built a solid career with leading hotel groups and renowned restaurants.
He has worked on projects including Vincci Hotels, Derby Hotels Collection, Restaurante MasterChef and Barceló Hotel Group, where he has led teams and developed gastronomic concepts centred on produce, tradition and the evolution of Spanish cuisine.
At Somos, Jorge Lacera creates honest, contemporary Madrid cuisine, without artifice, built on distinctly local foundations that are familiar and deeply rooted in culinary memory. His approach sees Madrid as a crossroads: an open, diverse city full of influences, where tradition evolves without losing its essence.

His cooking draws on techniques such as charcoal grilling, marinating, stewing, pil-pil, stocks and confit, always allowing the ingredients and flavour to take centre stage. Seasonal vegetables, freshly landed fish, pulses, Iberian products and Spanish ingredients take centre stage in a concise, vibrant and constantly evolving menu.
Among the dishes that best represent his style are chargrilled leek with romesco and citrus, Madrid-style tripe with pig's trotter and snout, and verdina beans with scallop and scarlet prawn. Three dishes that sum up his philosophy: memory, produce and gentle fire.
